This rice dish has its history, since the sailors who had to survive and stay strong on the high seas, cooked the rice in the broth they made with the bones of the fish (whitebait), and also used it for a good soup. The idea was to make the broth with something very cheap that in the market had almost no value, to be able to leave the good fish and seafood to sell when arriving at the port, and at the same time have a consistent dish that would yield in quantity to be well fed.

Today, fish stock for arroz a banda is cooked with finest fish and broths, but with the same passion as years ago. This rice is tipically served with a seasoning called salmorreta (a sauce made of ñora, garlic, tomato and olive oil).

In the city of Alicante, capital of the province, the City Council has registered the “Alicante Ciudad del Arroz” brand, as an initiative to promote typical Alicante cuisine. This initiative, backed with different activities by the Alicante Restaurant Association, such as the Alicante Ciudad del Arroz International Contest, is one of the most important distinctions for those who adhere to and collaborate with the promotion of commerce, hospitality and tourism in the city.
